Spinach Cashew Pesto

This recipe is loaded with nutrition and makes a great alternative to most anything that you would buy from a jar at the grocery store. Use as a sandwich spread, add at the end to some stir-fry veggies, or just use simply as a dip for crackers

  1. Add all ingredients to a small food processor or good blender. Blend until mixture is smooth
  2. Garnish with crumbled feta and whole cashews.

Variations

  • Experiment with different nuts. We’ve tried pecans ourselves but walnuts, almonds and pine nuts are great substitutes.
  • Add in some fresh herbs for a kick of flavour. Mint, cilantro and basil are obvious winners.
