Place the almonds in a bag and break up with a mallet or the bottom of a healthy pot.
Place the olives, almonds, shallots, garlic, parsley and pepper in the food processor and pulse until everything is coarsely chopped. If you don’t have a food processor, then you can make this recipe by chopping everything by hand.
Add the olive oil slowly and pulse to incorporate until you get the right consistency.
