- Start off by slicing up your apples. You can either do this with a knife or by using a mandolin.
- Next toss the sliced apples with the cinnamon in a small mixing bowl until evenly distributed and then place the apples in a small – medium sized casserole dish.
- Now in your blender of small food processor add the oats, coconut, sugar and salt and pulse to chop up the oats and coconut.
- Add the butter and continue to pulse until incorporated. Now top the apples with the oat mixture.
- Bake in a preheated 350° F oven for about 45 minutes or until nicely browned on top.
- Cool for 10 minutes and then enjoy as is or with vanilla Greek yogurt or ice cream.

Variations
- Keep the coconut connection rolling by substituting coconut oil in place of the butter if desired.
