Purple Cabbage and Apple Slaw

Purple cabbage is truly a king of veggies. Well at least a knight. Lots of healthy benefits to incorporating cabbage into your diet and this recipe offers one tasty way to do it.


  • Dressing:


  1. You can make a double batch of this recipe and enjoy it as one of your go to dressing recipes.  Mix all the ingredients, whisk well and set aside for the moment.
  2. Combine the cabbage, apple, pumpkin seeds and green onion in a medium sized mixing bowl.
  3. Toss with the desired amount of dressing and either eat right away or mix it ahead of time and keep in the fridge for 4 hours to soften up the cabbage a little.
  4. Mix a big batch of this salad and enjoy it for days and days as it holds beautifully in the fridge.


You can make this slaw with green cabbage as in addition to or in place of the purple cabbage. You can also add some shredded carrot in place of the apple if that is not your thing.
