Once the chorizo sausages have been removed from their casing, fry them up in a hot pan with a touch of oil. Stir and break up the sausage until nicely crumbled and almost cooked through.
Add the cabbage and sauté for a few more minutes and then finish off with a little hot sauce of your choosing. Set aside.
Whisk together the eggs with the whipping cream, salt and pepper until the yolks are completely combined with the whites.
Preheat a medium fry pan on medium heat. Add the butter and then add the whisked eggs. Using a heat resistant spatula, continually release the cooked egg from the bottom of the pan and the eggs are just cooked.
Feel free to skip the sausage and just use the cabbage if want to make it a little more vegetarian 🙂
