Blueberry Coconut Chia Smoothie

Blueberry Coconut Chia Smoothie



  1. After soaking the pumpkin seeds overnight at room temp, drain off the water (and the anti-nutrients) and then add about ¾ cup of fresh filtered water.
  2. Add the oats to the water and allow them to soak for 15 minutes.
  3. Alright, ready to blend.  Add the soaked seeds and oats along with the fresh water to the blender.
  4. Add the coconut milk, chia seeds, cinnamon, blueberries, honey and vanilla to the blender and blend on high.  Let the blender run until the smoothie is very smooth.  This is where a good quality blender earns its keep.
  5. Once smooth, serve it up cold and enjoy.


For a creamier version add 1 banana to the mix.
