Kale Cauliflower Saute

So we need to eat more green leafy vegetables if we want to be healthy right. So here is a recipe for you to get it started. The nuttiness of the sautéed cauliflower balance out the bitterness of the kale.

Ingredients

Directions

  1.  Preheat a large fry pan on medium heat. Add the butter and oil. Once the butter is melted, add the onion and cauliflower. Sauté, stirring occasionally until nicely browned.
  2.  Add the garlic and sauté for 2 minutes more stirring regularly.
  3.  Now add the kale and orange juice and cook, stirring regularly until the kale has wilted down and the orange juice has concentrated. You don’t want it to be to liquidy.
  4.  Serve and enjoy this tasty approach to healthy kale!

Variations

  •  You can make this recipe using fresh spinach very successfully. You will need 2 bunches.
  •  Spice it up by adding 1 teaspoon of curry powder to the pan when you add the garlic.

    This was as delicious as the ingredient list had me convinced it would be! :) Even my 4-year-old ate all of his vegetables! I will definitely make this again. FYI: I used about half a 10 oz bag of kale, which I was guessing might be somewhat less than what one could get from a fairly small "bunch" of kale. I was glad (and surely lucky!) that it nicely balanced the amount of cauliflower I was using -- which was about half of the small florets I got from the head (but please note that I am just now realizing that there may be several advantages to chopping caulflower rather than "pruning" as I am wont to do). I also used only one clove of garlic rather than a tablespoon, but I think more would be nice next time. (I had wanted to keep it subtle, but it was more like invisible. Guess I should make it according to the instructions before modifying! Though, in my defense, I had only one clove of garlic in my handy garlic container, and it WAS listed as optional, so I stand by my decision to resist getting a new garlic bulb from my storage area. Besides, it WAS completely delicious the way the kale and cauliflower and orange flavours worked together.)

    I had a bunch of kale I’d sautéed with garlic & onion sirring in the frig, then got a big cauliflower from my CSA this week. So I cut up & microwaved the cauliflower in a bit of water for 6 min (speeds up the sautéing), then sautéed it & added the kale mixture. I liked the curry powder idea, so added that; had no OJ, so I added a sprinkle of bottled lime juice (!) to moisten it; & for some protein I also added some “coconut flavored” cashews from Aldis. WOW! Thanks for the ideas!

    I tried substituting lime juice for orange juice since I did not have any and it was too overwhelming. Next time I will just add a little water.

      Yes, lime juice is much more potent than orange juice! At least you learned something :)

    This recipe was absolutely amazing and is a new family favorite. I had just received kale and cauliflower in my local organic farm box. So good!
