The mellow sweet flavour of rooibos tea makes for a wonderful rub. The flavour of the coriander pairs up nicely with the rooibos and the chilli flakes add a nice touch of heat.
Combine all of the rub ingredients together in a mixing bowl and stir well to combine. If you are using immediately, then have at her. Alternatively, you can make this up ahead of time and store in an air tight container in a dark place.
Select any cut or roast of chicken or pork, oil the meat lightly and then liberally sprinkle on the rub mixture.
After spicing, roast in the oven or toaster oven until the meat is cooked through. Take care not to burn the rub.
Adding ¼ teaspoon of garlic powder would be yummy!
