Fennel Beet and Sausage Stir-fry

Super simple and very delicious…with only 3 main ingredients this dish is designed to be a quick and easy path to a healthy dinner.

Directions

  1. Start this recipe by gently simmering the sausage for about 10 minutes or until it is cooked through.  Once cooked, remove from the water and set aside.
  2. Now preheat a large fry pan on medium heat.  Add the oil, and then the beets and fennel.  Sauté, stirring regularly until the fennel is lightly browned.
  3. Slice the cooked sausage and then add to the pan along with the salt, fennel seeds and chilli flakes.
  4. Sauté for a couple of minutes to warm the sausage and stir well to combine.
  5. Portion out the stir-fry and then garnish with a dollop of yogurt and a crumble of chips and enjoy immediately.

Variations

Save some of the fennel bulb greens and use as a garnish to go on top of the finished dish.

    Such a beautiful meal. Made it twice already in a month. Family and our guest were amazed! I served it with brown and a green salad. So satisfying, yet it feels light in our bodies.

    This was quite good, thanks so much for posting it. I had a pound of mild sausage that needed to be cooked, plus golden beets and a fennel bulb. And google found this, yay. I’ll make it again for sure, but will use more beets and fennel. Plus more than a dollop of yogurt!
