Tofu Egg Breakfast Scramble

This is a great protein loaded breakfast dish that works well on its own with toast or as filler for a wrap.



  1. Whisk the eggs, salt and pepper together well in a mixing bowl and set aside.
  2. Preheat a medium or small fry pan on medium heat. Add the butter and once melted add the onion and tofu. Sauté, breaking the tofu into small pieces until everything is lightly browned all over.
  3. Add the garlic and sauté for 2 minutes more and then add the spinach. After spinach has wilted (about 30 seconds) add the egg.
  4. Using a spatula stir the eggs until they are cooked through and then serve with your favourite breakfast accompaniments.


  • You can always add some extra veggies. Toss in some red or green pepper or perhaps some zucchini with the onions and tofu when first sau. téing.

    This is basically a "Joe's Special" with tofu instead of ground beef. I found this recipe after sizing up what was in my refrigerator for dinner and googling "what recipe can I make with tofu and eggs?" Fortunately, I also had garlic and onions on hand, and was able to get enough spinach leaves out of my mixed-salad blend. To the menu on this page, I added some other things I was trying to use up: 4 tiny red new potatoes. 1/4 cup chopped fresh cilantro 1/8 diced fresh jalapeno pepper 2 Tbsp parmesan cheese Really, it turned out better than I had any right to expect. 4 stars for "Joe's Tofu Special - California Edition."

    I've started to implement vegetarian food at least 4days out of the week. This tofu scramble is amazing. I will be adding this recipe for breakfast and brunch.
