
Sweet Chili Lime DrumsticksRecipe by Chef Michael Williams Prep time 8 mins Cook time 30 mins Ingredients ¼ cup lime juice (approx. 3 limes) ¾ cup pineapple juice 1/3 cup maple syrup ¼ cup canola oil zest from 1 lime (optional) 1 tsp chilli powder 1 tsp salt (coarse if possible) 1 tbsp garlic (minced) 6-8 chicken drumsticks Directions Add all ingredients including the chicken into a sealable bag and shake. Refrigerate and marinate overnight (up to 12 hours) turning once. Remove chicken from bag and pour marinade into a medium pot. Cook on medium-high heat until mixture begins to turn golden brown and thicken (approximately 10 mins). Set aside. Preheat oven to 425 degrees Fahrenheit. Place chicken on a non-stick baking tray and place in oven. Cook for 30-40 minutes (or until cooked completely). Drizzle sauce over cooked chicken and serve as a delicious appetizer or pair with your favourite side-dish for a meal. Variations For a ready-to-serve dip try French vanilla or plain yogurt. Add crushed chilli’s to taste if you like it spicy.
