Sundried Tomato TzatzikiRecipe by Chef Michael Williams Prep time 10 mins This is an awesome tzatziki recipe. We have used yogurt instead of the normal high fat sour cream and added a touch of sweetness with the honey and sundried tomatoes. Ingredients 1 cucumber or ½ cup (grated, squeeze out as much juice as possible) ½ cup hydrated sundried tomatoes (drained, finely chopped) 1 tablespoon dill (finely chopped) 1-2 garlic cloves (minced, centre core removed) 1 tablespoon honey 1 ½ cups plain yogurt (not low-fat) salt and pepper to taste Directions In a large mixing bowl, combine all ingredients except yogurt. Once ingredients are evenly distributed, gently stir-in yogurt – over stirring may make the tzatziki runny. Add salt and pepper to taste. Garnish with chopped dill and sun-dried tomatoes. Variations For a different zing, substitute the dill with 1-2 tablespoons of chopped basil or mint. Leave in the tomato or omit if you want the flavour of the fresh herb to stand out. Add a little extra sweetness to your life (…and the tzatziki) by adding a ¼ cup of caramelized onions.
