Spicy Asparagus SautéRecipe by Chef Michael Williams Prep time 10 mins Cook time 5 mins This sweet and spicy sauce can be used in place of a bottled stir-fry sauce. It is simple delicious and so much better than most things you will find pre-made. Feel free to make a double or triple batch as it will keep in the fridge well. Ingredients For the sauce: 1 small shallot (minced) 2 cloves garlic (minced) ¼ cup tamari ¼ cup 100% pure maple syrup 2 tablespoons rice wine vinegar 1 teaspoon ground coriander ½ teaspoon red pepper flakes 2 bunches asparagus (cut into bite size) Directions Start this off by combining all of the ingredients for the sauce in a mixing bowl. Preheat a large fry pan on medium-high heat. Add the asparagus and the sauce and sauté until the asparagus is cooked and the sauce has concentrated. Serve along with some rice or another grain and your favourite protein. Variations Asparagus season all done? This sauce works great with cabbage, broccoli, zucchini or any other common stir-fry veggies.
