When you follow this recipe, the cauliflower is actually quite similar in texture to rice, making a great option if you need to be carb conscious. Ingredients 2 tablespoons coconut oil ¼ - ½ a head of cauliflower (about 2 cups) ½ cup corn (frozen) Sea salt, fresh ground pepper, ground cumin to taste ¼ cup cheese (grated) Directions Start this off by washing and then grating the cauliflower on the large holes of a cheese grater. Preheat a medium fry pan on medium heat and add the coconut oil and then the cauliflower. Sauté, stirring regularly until the cauliflower is lightly browned. This should only take about 5 minutes. Add the corn and season to your taste preferences with salt, pepper and cumin or whatever spices come to mind. Transfer to a bowl and top with the grated cheese and serve immediately. Variations To boost the flavour of this dish, sauté ½ cup of diced red or yellow onions and 1 clove of rough chopped garlic before adding the cauliflower.
