Piña Colada

Probably one of the most refreshing frozen drinks in the world, piña colada’s have been refreshing folks in the Caribbean for decades. Here is my take on the classic drink and it keeps me feeling refreshed for sure.

  1. Once you cut the skin and core off your pineapple you need to cut the delicious fruit into chunks and then freeze them.  I like to prepare a whole pineapple, freeze it in a single layer on a baking sheet and then once it is frozen transfer and store in Ziploc bags.
  2. Once your pineapple is frozen, it is time to Piña.  In an effort to get the pineapple as smooth as possible, start off with just the pineapple and pineapple juice in the blender and puree until smooth.
  3. Now add the coconut milk and vanilla to the blender and process again until nice and smooth.
  4. If you want your Piña a little thicker then add a few ice cubes and process again.
