Overnight Oatmeal

I have always pushed large flake oatmeal as a great way to start your day. Now I have moved on to steel cut oats. As good as large flake oats are, steel cut are even better. Less processed and more nutritious in many ways…not to mention easy!

  1.  Combine the oats with the milk and bring to a boil. Simmer for just 1 minute and then turn off the heat. Place a tight fitting lid on the pot and then let it sit for 1 hour on the warm element. Once it has cooled to room temperature, refrigerate until you are ready to eat.  ** you can make a big batch and then transfer to a storage container…then you have oatmeal for a few days! Just take what you need, and follow the next steps **
  2.  When its time, warm your oatmeal up again on the stove or in the microwave and give it a good stir.
  3.  Shred the apple on your cheese grater or chop into small pieces. I like to leave the skin on and that is why its important to use organic apples. Add the apple to the warm oatmeal immediately so they don’t brown.
  4.  Place the warm oatmeal in a bowl and top with the chopped nuts, drizzle with maple syrup and serve. Add a little extra milk if desired.
