Vegetable Broth

This is a basic vegetable broth and its tastes so much better than anything that you can buy pre-made from the store. Super easy and freezes nicely, its worth making your own for cooking rice and making soups!

  1. Combine all ingredients in a large pot.  Bring to a boil and then reduce to a simmer.
  2. Simmer for about 1 hour and then take the pot off of the heat and cool.  Once cool, strain the veggies and chill the broth in the fridge.
  3. Divide into smaller storage containers and once chilled, keep in the fridge for up to 7 days or freeze into smaller portions for convenient use in the future.

Variations

  • You can also add different veggies to the broth like fennel, tomato and lemongrass for a totally different flavoured.
