Green Lentils

High in protein, fibre, folate and vitamin B1, lentils are one of the legume/grain to include in your diet. Easy to cook and very tasty, try adding lentils to your dishes today.

  1.  Give the lentils a good rinse and then drain well.
  2.  Bring water and salt to a boil and then add the rinsed lentils. Cover with a tight fitting lid and reduce heat to low. Simmer the lentils for 20-30 minutes depending on how you like them. 20 minutes will be quite firm where as 30 minutes will be much softer.
  3.  Stain any excess water and use the lentils in stir-fry’s, soups or serve them on their own as part of dinner. Combine with your favourite protein and lots of veggies and dinner is done.

Variations

  •  You can use broth instead of water to bump up the flavour, but I like adding spices. Cumin, coriander, paprika, turmeric, chilli powder etc. Add in anywhere from ¼ to 1 teaspoon depending on your taste preferences and see what flavours you like best.

    Very nice recipe for the green lentils and open to many options for what can be added to them, once cooked or while cooking.
