This is a wonderfully healthy salad dressing with a good healthy fat profile. Besides the health jargon, it tastes darn good too…so well worth a try.
Combine mustard, vinegar, egg yolks, garlic, salt, pepper and cumin in a food processor or blender.
Turn the processor/blender on and then in a steady stream add the oil while the machine is running. You can add the oils one after the other or simultaneously, but just add slowly or the oil will not emulsify.
Check the consistency and add a little more oil if the dressing needs to be thicker.
Add some grated parmesan cheese to the dressing to kick it up another level
