Cheesy Cauliflower Fried Rice

High in fibre and nutritionally dense, cauliflower ‘rice’ is the perfect replacement to conventional rice if you are looking for a light side dish. When you follow this recipe, the cauliflower is actually quite similar in texture to rice, making a great option if you need to be carb conscious.

  1. Start this off by washing and then grating the cauliflower on the large holes of a cheese grater.
  2. Preheat a medium fry pan on medium heat and add the coconut oil and then the cauliflower.  Sauté, stirring regularly until the cauliflower is lightly browned.  This should only take about 5 minutes.
  3. Add the corn and season to your taste preferences with salt, pepper and cumin or whatever spices come to mind.
  4. Transfer to a bowl and top with the grated cheese and serve immediately.

Variations

To boost the flavour of this dish, sauté ½ cup of diced red or yellow onions and 1 clove of rough chopped garlic before adding the cauliflower.

    can't wait to try this...just wondering, why the coconut oil?? not something i have in my house...are there options to this...olive oil, sesame oil???

      Yes, you can use either of the two you suggested. Coconut oil has a great flavour and I often use it for my high temperature cooking.
